Cadillac
côtes de Bordeaux AOC - Red

Appellation : Cadillac Côtes de Bordeaux
Soil type : clayey limestone and gravel
Surface area : 35 hectares (861/2 acres)
Grape varieties : 75 % Merlot and 25 % Cabernet
Wine making techniques : cold soak before fermentation, slow alcoholic fermentation with controlled temperatures. Vatting period adjusted after daily tasting to achieve the extraction of the finest possible tannins and aromas. Malolactic fermentation at a constant temperature.
Ageing is carried out using staves
Planting density : 5,000 vines per hectare
Average age of the vines : 20 years
Pruning method : double Guyot
Tasting comments : lovely deep ruby colour with gold tints. Very expressive bouquet so typical of the Cabernet variety with its hint of menthol and autumnal fragrances.
The wine is rich with delicate woodiness on the palate. It has breeding and is very elegant with all the aromas you could wish for on the finish.

Bordeaux AOC - White

Appellation : Bordeaux - White AOC
Soil type : clayey limestone and clay
Surface area : 6.55 hectares (16.19 acres)
Grape varieties : 60 % Sémillon and 40 % Sauvignon
Wine making techniques : the juice is allowed to settle at a low temperature, it is then racked before alcoholic fermentation takes place at a controlled temperature of 16°C (61°F). The juice is seeded with scrupulously selected yeasts.
Ageing takes place after light filtration in stainless steel vats for three months before bottling.
Planting density : 5,000 vines per hectare/ha
Age of the vines : 10 to 20 years
Pruning method : double Guyot
Tasting comments : crystal clear robe with lovely flashes of light. Subtle nose with hints of boxwood and green apple. It is sappy on the palate and spritzy on the tongue with distinct citrus flavours. This is an ideal wine for seafood, shellfish or alongside a lovely dish of iodised oysters.

AOC Bordeaux - Rosé

Appellation : Bordeaux - Rosé AOC
Surface area : 11 hectares (27 acres)
Grape varieties : 75 % Merlot and 25 % Cabernet
Wine making techniques : the juice is allowed to settle at a low temperature, it is then racked before alcoholic fermentation takes place at a controlled temperature of 14°C (57°F). The juice is seeded with scrupulously selected aromatic yeasts.
The fruit aromas are preserved at this low fermentation temperature. The wine is then aged on its lees for one month to improve its flavours.
Ageing takes place after light filtration in stainless steel vats for three months before bottling.
Tasting comments : very pretty robe with a colour of rose petals. Subtle, elegant nose with floral fragrances. Enjoyable and full of freshness on the palate. An ideal accompaniment for picnics to marry with cold meats and garlic sausage, pizzas and pasta dishes.

Bordeaux - Clairet AOC

Appellation : Bordeaux - Clairet AOC
Surface area : 3 hectares (71/2 acres)
Grape varieties : 100 % Merlot
Origin : all the juice used to make this Clairet is taken from tanks of red after the first 24 hours of cold soak prior to fermentation.

Wine making techniques : the juice is allowed to settle at a low temperature before alcoholic fermentation begins.
The juice is seeded with scrupulously selected yeasts. The temperature is kept at 16°C (61°F) during fermentation to protect the fruit and maintain freshness.
Ageing : the wine is lightly filtered, then aged in stainless steel tanks for three months before bottling.
Tasting comments : lovely deep purplish colour. On the nose it is warm and welcoming with hints of fresh grape and dry fruits. This wine is quaffable and spritzy on the tongue with an aromatic finish. It is a pleasant accompaniment for cold meats and garlic sausage, pizzas and fresh pasta.

All you wanted to know about grape varieties and never dared ask

75% of Sainte-Catherine red wines are made with the Merlot variety, which produces characteristically supple, round, generous wines, the latter feature being inherited from the men and women who look after them. Merlot is the majority variety used in the Cadillac Côtes de Bordeaux and Cadillac appellation areas, because it is perfectly adapted to our clayey limestone soils. Furthermore, it blends very well with our Cabernet grapes.

Merlot

The Merlot variety has been shown to result from a cross between the Magdeleine Noire des Charentes grape and Cabernet Franc. When it is blended with other varieties, such as Cabernet, it makes the wine lighter and gives it more intense colour.
Aromas of black fruits, liquorice, jam, leather and sometimes truffles.

Cabernet Franc

The Cabernet Franc grape variety originated in the Pyrenees and has been cultivated in the Gironde region since the first century AD. It has less colour than Cabernet Sauvignon and displays great structure on the palate.
Aromas of cocoa, red and black fruits, pepper, red capsicum and even violets.

Cabernet Sauvignon

The Cabernet Sauvignon grape variety is iconic in the Bordeaux area. It arose as a cross between Cabernet Franc and Sauvignon Blanc. It displays deep colour and imparts tannins to wines that makes them very suited to barrel-ageing. Aromas of blackcurrant, black chocolate, mild spice and cherries in kirsch.

Sauvignon

On the estate we grow both Sauvignon Blanc and Sauvignon Gris with which we make fragrant dry white wines that are subtle and well-balanced.
Aromas of yellow fruit, citrus, white flowers and sometimes exotic fruit.

Sémillon

The Semillon grape variety also originated in the Bordeaux area. It produces wines that age well. Semillon is very frequently combined with Sauvignon.
Aromas of almonds and dry fruits, cinnamon, honey, white flowers, butter, apricot and apples.
